Tourlou Tourlou - Mixed vegetables roasted in the oven long enough to bring out the vegetables' natural Today, I'm sharing a tasty recipe called tourlou tourlou!

Tourlou Tourlou means 'all mixed up' and makes great use of the fresh and tasty summer vegetables.
Ingredients of Tourlou Tourlou 🌱

- Prepare 1 of small Courgette.
- You need of Peppers (any shape and any colour).
- It's of 1 Red onion.
- It's 1 of aubergine.
- Prepare A few of mushrooms (optional).
- It's 1 of white or brown onion (or shallot).
- Prepare 1 of red onion.
- You need 1 of little spinach or summer greens.
- You need of Garlic.
- It's 1 of bay leaf.
- Prepare 1 of spring thyme.
- Prepare 1 splash of white wine.
- You need 1 splash of good olive oil.
- You need A few of sprigs of parsley and/or mint - chopped.
- Prepare of Greek thyme or oregano.
- You need of Lemon.
- Prepare to taste of Sea salt and black pepper.
Tourlou Tourlou 🌱 step by step
- Wash and chop the veggies. Heat a pan with just a little oil and add the veggies in the pan in the order they will take to cook. You can add some of the tomatoes but save some for the sauce. Start with the onions and sauté until translucent, add the garlic and then the peppers and courgettes. You want to sauté until cooked but not soft and squishy. You could pop them in a roasting tray in the oven if you prefer..
- Grate the tomatoes on top of the veggies. You can use good quality crushed tomatoes if you prefer. Add the hard herbs - bay and thyme. Cook on a gentle simmer until the veg take on the flavour of the garlic and tomatoes..
- Serve with a drizzle of olive oil, a sprinkle of soft herbs and a squeeze of lemon 🍋.
