Eggplant Party Appetiser with Yogurt Dip instructions

  1. Rinse and slice the aubergine into roundels.
  2. Season with salt and keep the aubergine marinated for 5-7 minutes.
  3. Add enough oil in a wok to fry.
  4. Crack and beat the egg well in a bowl.
  5. In another bowl, add the bread crumbs, sesame seeds, Italian seasoning and some salt to taste.
  6. Mix all the ingredients well.
  7. Now coat every sliced aubergine first in the egg and then in the bread crumbs.
  8. Fry them in batches until golden brown.
