Ingredients of Grilled Veg Hummus Rolls

  1. You need 1 of medium sized Eggplant.
  2. You need 1 of medium sized Bell Pepper.
  3. You need 1 of big Onion.
  4. Prepare 1 of big Tomato.
  5. It's 1/2 teaspoon of Chilli powder.
  6. It's 1/4 Tsp of Turmeric powder.
  7. It's 1/4 Tsp of Chat masala.
  8. You need 1/2 teaspoon of Lemon juice.
  9. You need to taste of Salt.
  10. You need 1 tablespoon of Olive oil.
  11. Prepare of For Hummus.
  12. Prepare 1 cup of Boiled Chick peas.
  13. It's 1 tablespoon of Sesame seed paste (Tahini).
  14. Prepare 2 of Garlic cloves.
  15. It's 1/2 teaspoon of Chilli flakes.
  16. It's 1/2 teaspoon of Lemon juice.
  17. You need 1 tablespoon of Olive oil.
  18. Prepare to taste of Salt.
  19. It's of Other Ingredients.
  20. Prepare As needed of White/Brown slice breads.
  21. Prepare 5-6 of Cherry Tomatoes.
  22. Prepare 1 of big Cucumber.
  23. Prepare as needed of Soya leaves (optional).

Grilled Veg Hummus Rolls instructions

  1. To make grilled vegetables first cut the cleaned veggies in long broad pieces. Remove the seeds of tomato. You can use other veggies like mushroom, carrot, zucchini etc which needs less time to cook..
  2. Marinade the veggies with chilli powder, turmeric powder, chat masala, lemon juice and salt for 10 minutes..
  3. After 10 minutes heat a grilled pan with olive oil..
  4. Add in the marinated veggies and grill them until the veggies become soft. Keep flame at a high heat at first. When the veggies get char marks, reduce the flame..
  5. When done remove from heat and keep aside..
  6. To make hummus put all the things mentioned above in the ingredient section in a blender..
  7. With 1/4 th cup of drinking water or chickpea stock, grind to a smooth paste..
  8. Transfer to a bowl, add in some more olive oil. Hummus is ready to use..
  9. Wash and cut the cucumber in thin strips. Also, cut cherry tomatoes in halves. I used some soya leaves for it's flavour. You can use Coriander or Mint or Basil leaves instead..
  10. Take 2 bread slices and trim off the sides..
  11. With a rolling pin roll the pieces to make them thin..
  12. Put little water in one edge of the bread and stick one edge of 2nd bread as shown in the picture to make a long sheet..
  13. Spread 1 tablespoon of the prepared hummus to the sheet..
  14. Now place some grilled veggies to one side of the bread sheet..
  15. Next add in some cucumber slices, cherry tomatoes and some herb..
  16. Roll the sheet very carefully from the stuffing side to the other side to make a roll..
  17. Keep it in a dish and follow the same procedure to make other rolls..
  18. Serve immediately with some additional hummus and fresh cucumber-tomato slices..
