- in large bowl combine half of the evoo, salt, pepper and Tabasco.
- dice eggplant, potato, zucchini, onion, peppers, and carrots..
- add parsley to oil mix.
- mix in vegetables, turn well so evenly coated.
- grease 4qt casserole.
- dice 2 tomatoes and spread over the bottom of the dish.
- layer half of the vegetables over tomatoes.
- layer uncooked rice.
- add remaining vegetables.
- add the remaining tomatoes.
- mix remaining evoo, water and vinegar. pour over casserole.
- bake uncovered at 350 for 90 minutes.
- add cheese and bake 30 more minutes.
