Corn Muffins step by step

  1. Preheat the oven to 400F. Spray a muffin pan with non-stick spray..
  2. Whisk the flour, cornmeal, baking powder, baking soda and salt together..
  3. Whisk the eggs and sugar in a second bowl. Let sit for 10 minutes..
  4. Slowly whisk in the melted butter.
  5. Whisk in the yogurt and milk.
  6. Pour the wet ingredients onto the dry ingredients and combine gently with a rubber spatula until just combined..
  7. Scoop equally into the 12 prepared muffin cups.
  8. Bake until golden brown and a toothpick comes out clean, about 20 minutes.
  9. Cool in the pan for 10 minutes, then on a wire rack for 10 minutes.
