Power Muffin

Ingredients of Power Muffin

  1. It's 2 cup of whole-wheat pastry flour.
  2. You need 2 tsp of Baking soda.
  3. You need 2 tsp of Ground cinnamon.
  4. You need 1/4 tsp of Ground cardamom.
  5. It's 1/2 tsp of salt.
  6. You need 1 of Orange.
  7. It's 3/4 cup of Sugar.
  8. You need 2 large of egg whites.
  9. You need 1/4 cup of Extra virgin olive oil.
  10. Prepare 1/2 cup of Fat free plain greek yogurt.
  11. Prepare 2 cup of Grated carrots.
  12. Prepare 2 cup of Fresh or thawed frozen cranberries, divided.
  13. Prepare 1/4 cup of Pistachios, finely chopped.

Power Muffin instructions

  1. Preheat oven to 375*F. Line muffin cups with paper liners..
  2. In a large bowl, whisk the first 5 ingredients (through salt)..
  3. In another bowl, grate 1 tsp Orange zest and squeeze 1/4 cup juice..
  4. Whisk in the sugar, egg whites, oil, and yogurt. Stir into flour mixture just until moistened. Fold in carrots and 1 1/2 cups cranberries..
  5. Divide batter among muffin cups. Top with pistachios and remaining cranberries..
  6. Bake until a toothpick inserted in a muffin comes out clean (22-25 minutes.) Let cool in the pan on a wire rack for 5 minutes. Unmold; cool completely on rack..
